Healthy Oatmeal Cookies (perfect for breakfast or a quick snack)

These cookies are a delicious alternative to regular oatmeal cookies. Heart healthy olive oil and unsweetened apple sauce replace butter, pure honey is used instead of sugar and agave nectar replaces brown sugar. They taste just like traditional oatmeal cookies but without all of the fat and sugar. Yum!




Ingredients:

Dry ingredients:

1 cup whole wheat flour
1 1/2 cups Quick Oats
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 Tbsp Cinnamon

Wet ingredients:

1/2 cup honey
1/2 cup canola or olive oil (substitute half (1/4 cup) of the oil for unsweetened applesauce to bring the fat and calorie content down)
1 Tablespoon Agave nectar
1 egg
1 tsp water
1 tsp Vanilla

Additional Ingredients:

1/2 cup raisins (optional - I chose not to add them)

Preparation:
  1. In a large bowl, mix all the dry ingredients together.
  2. In a medium bowl, mix all the wet ingredients together.
  3. Then add wet ingredients to dry and mix together. Add the raisins.
4. COOL the mix for 20 minutes in the fridge before placing cookies on baking sheet
5. Preheat the oven to 335 degrees.
6. Drop by teaspoonfuls onto your baking sheet. Press down with a fork or back of a spoon to ensure even cooking.
7. Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. Cool and drizzle a little bit of honey over the top of cookies if desired.

Recipe yields about 12-15 cookies.
